[Instagram] https://www.instagram.com/z_on_tateishi/
East of the Arakawa River lies Tateishi, a Tokyo neighborhood known today as a "senbero" district — cheap eats, cheap drinks — where something of the shady air of the postwar black markets still lingers beneath its plain, unpretentious downtown energy. Zion, a restaurant built around original chicken cuisine, stands on one of its corners.
The owner-chef and his wife had closed a much larger restaurant in Yokohama, wanting to return to what first drew him to cooking: serving dishes he was particular about and carefully chosen drinks while staying close enough to see his guests' faces. To answer that wish, in a space under 30m2 — less than 4-meter wide and 9-meter deep — we built the plan around a counter. On the design side, we deliberately kept our distance from anything that read as a typical chicken restaurant, giving the room instead the air of a basement bar: a place whose nationality and category are hard to place.
The interior is simple and built around black, combining materials that keep the trace of the hand at work: a hanging shelf of black-finished raw steel, a veneer-topped counter, plastered walls left rough on purpose. At the center, a large steel-frame shelf does triple duty — storage for tableware, a loose division between counter and kitchen, and a shade for the lighting — folding several functional and design problems into a single piece.
The space that resulted resonates with the owner's own disposition: someone who never stops refining his craft, keeps inventing original dishes, and holds firmly to a one-to-one relationship with every guest. It carries an intimacy that seems to enfold each one-time, never-to-be-repeated encounter between a guest and a dish. Years after opening, that same disposition has only grown stronger, and the restaurant continues, largely unchanged, exactly as it began.
